Mediterranean Diet and Lifestyle in Italy


Program Description:
This course provides an in-depth experience in farm to fork cooking in the food labs of SLU's Nutrition & Dietetics kitchens and gardens.  Students will compare the Mediterranean model of food and lifestyle with the American model through immersion in the culture of healthy eating and lifestyle habits of the Mediterranean city of Salerno, Italy.  The course will culminate with a two week trip to Salerno, Italy- the home of the Mediterranean Diet, for an experience in healthy cooking, healthy eating, and healthy lifestyle.  Students will experience contact with local farmers, growers, chefs, and educators to expand their worldview of the critical economic and social issues facing Dietitians entering the Healthcare field.

Location:
Salerno, Italy is a city of 140,000 residents with a Mediterranean climate. Salerno's economy is based on food production and tourism. In addition to Salerno, this program will include trips to Cilento and the Amalfi coast. Students will stay in a hotel in Salerno.

Requirements:
Students must be accepted in the Department of Nutrition and Dietetics and be in good academic and disciplinary standing.
Students who apply MUST have already been accepting into the program by the Department of Nutrition and Dietetics.
